Jen Nails It Southern Pinterest Challenge

A few weeks back I introduced a new Jen Nails It Pinterest Challenge, wherein I was going Southern.

I, the little Hispanic girl, was going to try and make fried chicken and the whole enchilada. Um, make that grits casserole?

Here was the recipe and picture I snagged from Pinterest.
















I also decided to make this cheesy grits caserole.














As the coup d'etat I pulled in this recipe for collared greens.

I am a true American, meaning my cultural roots come from all over the place. My mother is a Mexican American and was born in Chihuahua Mexico, so cooking Mexican food is pretty much standard at all of our family gatherings. I can make enchiladas, tacos, burros, red chile sauce, beans, etc. You name it I make it and love it.

One thing I have NEVER EVER tried to make is Southern comfort food. My husband and children feel this is a situation that apparently needs to be remedied.

So, for my 3rd installment of the Jen Nails It Pinterest Challenge I will attempt to make a bona fide Southern dinner with fried chicken as the star!

I understand from my research that most fried chicken recipes have been handed down from generation to generation, can be decades even a hundred years old and are almost a living breathing entity in some families. Yup, I should totally be able to NAIL this bad boy for sure.

I am HOOKED on Pinterest!

I love the luscious desserts and savory fare that make me drool over their sweet perfection. I covet the fashion and perfectly coiffed hair that seems so easy to copy and incorporate into my busy life. I salute all of the holidays that I never even knew existed. I too will celebrate National Peanut Butter and Jelly Day with all of the gooey goodness displayed in the magical squares of preparation perfection!

Pinterest is like a big happy smorgasbord of the best of everything and I can sample and even put things away for future conquest with a single click.

It's no secret that I am completely time starved. Everything I cook, craft or try to accomplish in a day has to be done with maximum efficiency in mind. When I am on Pinterest, logic and reason forget to inform me that some of this stuff would be impossible for me. Something needs 40 ingredients, two weeks of preparation and ingredients only found in a Moroccan market, I can do that!  That Spaghetti sauce with the meat and cheese stuffed pasta that has been passed down for generations until it is embedded in your family's genetic code?  I got that, and should be able to knock it out in about 45 minutes.
